I have now found the tool to add a payee by clicking on the tiny gearwheel. I had assumed it should look like the Organise Categories feature.

Hi. now I understand what you're asking:

Also note that when entering a Transaction, if you type the new Payee name into the payee field and submit it will ask you if you want to add the payee.

This saves you having to add payees separately before before entering transaction.

Next time you need the payee it will then appear in the Dropdown - no need to go to Organise Payee.
